What’s For Dinner? (Vegan Alfredo)

today, i decided to do something different, slightly off the cuff from my usual. i actually attempted to make something up. well, sort of. i used pieces from different recipes here and there, and came up with this protein packed vegan alfredo sauce. it wasn’t quite up to snuff… in the recipe below, i’ve altered it from what i actually did. my sauce came out a little too thick, so i cut the cornstarch in half. it was also pretty bland with just garlic powder and some table salt, so i am going to use Garlic Salt next time, and hope that it comes out a little more flavorful. i also didn’t put anything green in there… i desperately wanted my daughter to eat it, and she has an aversion to eating anything that remotely resembles something healthy (even fruit!) so i tried to keep it as plain looking as possible. she ate a couple bites (wow) but nothing that should have kept me from adding what i really wanted to… which was some fresh chopped basil leaves. a handful of basil leaves makes ALL pasta taste better, IMO. so i’ll probably do that next time too. 🙂

all in all, it wasn’t a total failure. it was ridiculously healthy, vegan, and it didn’t taste bad… just a little bland. better luck next time, right? don’t worry, i don’t actually expect anybody else to try this. (i don’t think i have any readers anyways)  i’m mostly blogging about it for my own records.

so here it is…

Ridiculously Heathy Protein and Vitamin Packed Faux Alfredo

2 Cups Steamed Cauliflower
1 Can (15 oz) White Kidney Beans [Drained]
1 tbsp Earth Balance Butter
2 Cups Unflavored Almond Milk
1 tbsp Cornstarch
6 tbsp Brewer’s Yeast (I can’t seem to get my hands on Nutritional Yeast yet)
1 tbsp Garlic Salt
2 tsp Onion Powder
2 tsp Black Pepper
1 Box Whole Wheat Pasta

While steaming Cauliflower, prepare sauce.

Melt Earth Balance Vegan Butter in a pot. Whisk Cornstarch into the Almond Milk, then pour into the pot with the Earth Balance. Combine Brewer’s Yeast, Garlic Salt, Onion Powder and Black Pepper, and which into the Almond Milk mixture. Simmer on low.

When Cauliflower is fork-tender, dump it into a blender with White Kidney Beans. Add the liquid sauce mixture, and blend until smooth. replace into pot, and simmer. Prepare pasta, and combine when pasta is done.
